We take premium British heritage breed Pork shoulder from our friends at Turner & George. We rub it in our homemade mix of spice and seasoning. We burn the best seasoned and sustainably sourced pear and alder wood from our friends at the London Log Company to impart a soft and subtle yet complex smoke flavour. After the addition of some Cuban mojo we then pull it and put it in a soft roll with a dose of our sauce and our most prized and most un-American BBQ ingredient- Balsamela.
This is a classic Havana recipe given an original BEARBQ twist.
